Recipe – Kolche-Tandori – How to make KOLCHE TANDORI
4 large egg if too small make that 5
1 table spoon cardamom
1 teaspoon baking powder
1 table poon yeast
2 1/2cup sugar
1 1/2 cup oil
3/4 cup milk (6oz)
1/2 cup water
Flour to make firm dough
In a big bowl whisk together eggs,cardamom powder,yeast,baking powder and sugar than add warm milk and oil and beat the mixture until fluffy,I say about 4-5 minutes.Add flour in the mixture and slowly begin to knead the dough. Knead the dough for about 10 minutes, if the dough is to sticky you can add more flour to prevent sticking.The dough should be smooth firm but not that soft. Rub some oil with your hand all over the dough than cover top with a plastic food wrap and a big kitchen towel. And let the dough rise about 3-4 hours. Knead the dough again for 1-2 minutes and let the dough rest for another couple minutes. Divide the dough into 10- 12 (it depends how big or small you make the cookie) balls and place them over a clean towel or plastic food wrap. Put the ball dough over your palm or cutting board,slightly cut the side all around than flat the middle part not to thin I say about 3 inch high. Design the cookies. In a bowl mix 5 spoon milk and 2-3 egg yolk together than brush it all over the cookies than add black seeds in the middle of cookies. Put the cookies over baking trays and put them in the middle of rack oven,bake on 350 degrees. ((If you bake these yummy tandori cookie in a Tandor it taste even better, that’s why we call it “Kolche-Tandori”))
